Fresh & Crunchy Kohlrabi Slaw

Ingredients:
3 cups kohlrabi, peeled and julienned
1 cup carrots, julienned
3/4 cup radishes, thinly sliced
3 green onions, chopped
1/4 cup fresh cilantro, chopped
1/4 cup apple cider vinegar
2 tbsp olive oil
1 tbsp honey
1 tbsp Dijon mustard
Salt and pepper to taste
1/4 cup roasted sunflower seeds (optional)

Directions:
In a large bowl, combine the julienned kohlrabi, carrots, radishes, green onions, and cilantro.
In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
Pour the dressing over the vegetables and toss until everything is evenly coated.
If using, sprinkle the roasted sunflower seeds on top for extra crunch.
Let the slaw sit for 10 minutes to allow the flavors to meld.
Serve chilled or at room temperature as a refreshing side dish.
