
Ingredients:
1 lb shrimp, peeled and deveined
2 tbsp Old Bay seasoning
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
2 cloves garlic, minced
1 cup cooked rice (white or brown)
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh or canned)
1/4 cup sour cream
1 tbsp lime juice
1/4 cup fresh cilantro, chopped
4 large flour tortillas
Salt and pepper to taste
Directions:
In a large bowl, toss the shrimp with Old Bay seasoning until evenly coated.
Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp and set aside.
In the same skillet, add the remaining 1 tbsp of olive oil and sauté the sliced bell peppers and red onion until softened, about 4-5 minutes.
Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.
In a small bowl, mix the sour cream with lime juice, salt, and pepper to taste.
To assemble the burritos, lay a tortilla flat and add a scoop of rice in the center. Top with black beans, corn, sautéed peppers and onions, cooked shrimp, and a drizzle of the lime sour cream.
Sprinkle fresh cilantro over the filling, then fold the sides of the tortilla in and roll it up tightly.
Repeat with the remaining tortillas and ingredients.
Serve immediately, or wrap in foil and warm in the oven for a few minutes before serving.
