Ingredients:
1 box yellow cake mix
1/3 cup vegetable oil
2 large eggs
1 can (20 oz.) crushed pineapple (drained, juice reserved)
1 package (8 oz.) cream cheese (softened)
2 cups powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large bowl, combine the yellow cake mix, vegetable oil, and eggs. Mix until well combined and a dough forms.
Press the dough evenly into the bottom of the prepared baking dish.
In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and continue to beat until fully combined and creamy.
Stir in the drained crushed pineapple and vanilla extract. Mix until evenly distributed.
Spread the pineapple and cream cheese mixture over the dough in the baking dish.
Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and the center is set.
Remove from the oven and let the bars cool completely in the dish before cutting them into squares.
