
Ingredients:
For the Meatballs:
1 lb. ground beef
1/2 lb. ground pork (or substitute with ground turkey)
1/2 cup breadcrumbs
1/4 cup milk
1 small onion (finely chopped)
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
For the Casserole:
8 oz. wide egg noodles
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups beef broth
1/2 cup sour cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese (optional)
Directions:
Make the Meatballs: Preheat your oven to 375°F (190°C). In a large bowl, combine the ground beef, ground pork (or turkey), breadcrumbs, milk, chopped onion, egg, salt, pepper, nutmeg, and allspice. Mix well until everything is fully combined.
Shape the mixture into small meatballs, about 1 inch in diameter. Place the meatballs on a greased baking sheet and bake for 15-20 minutes, or until they are cooked through and browned. Remove from the oven and set aside.
Cook the Noodles: While the meatballs are baking, cook the egg noodles according to package instructions. Drain and set aside.
Prepare the Sauce: In a large skillet, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to form a roux. Gradually add the beef broth, continuing to whisk until the sauce thickens and begins to simmer.
Remove the skillet from heat and stir in the sour cream, salt, and pepper until the sauce is smooth and creamy.
Assemble the Casserole: In a large mixing bowl, combine the cooked egg noodles and the creamy sauce. Gently fold in the baked meatballs. Transfer the mixture to a greased 9×13-inch baking dish.
If desired, sprinkle shredded mozzarella cheese over the top.
Bake in the preheated oven at 350°F (175°C) for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
