World-Famous Chicken Quesadillas

Ingredients:
2 large chicken breasts, cooked and shredded
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
8 large flour tortillas
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/2 cup sour cream (optional for serving)
Salsa (optional for serving)

Directions:
Season the Chicken: In a large bowl, toss the shredded chicken with garlic powder, onion powder, chili powder, cumin, salt, and pepper.
Heat the Tortillas: Preheat a griddle or large skillet over medium heat and lightly grease with olive oil.
Assemble Quesadillas: Place a tortilla on the griddle, sprinkle with cheese, followed by seasoned chicken, diced tomatoes, and cilantro. Top with another layer of cheese, then cover with another tortilla.
Cook Until Golden: Cook the quesadilla for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
Slice and Serve: Remove from heat, slice into quarters, and serve with sour cream and salsa on the side.
