Ingredients:
1 1/2 lbs baby potatoes
2 tbsp unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 tsp black pepper
Salt to taste
1 tbsp fresh parsley, chopped (for garnish)
Directions:
Cook the Potatoes: In a large pot, bring water to a boil and add a pinch of salt. Add the baby potatoes and cook for 15-20 minutes, or until tender. Drain and set aside.
Make the Garlic Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream and bring to a simmer.
Add Cheese and Seasonings: Reduce the heat to low and stir in the grated Parmesan cheese, black pepper, and salt. Cook the sauce for 2-3 minutes until it thickens slightly.
Combine with Potatoes: Add the cooked baby potatoes to the skillet, tossing them in the creamy garlic sauce until they are well coated. Cook for an additional 2-3 minutes to heat through.
Serve: Garnish with chopped fresh parsley and serve the potatoes hot as a delicious side dish.
