
Ingredients:
1 lb beef sirloin or steak, cut into bite-sized pieces
1 tablespoon olive oil
1 small onion, finely diced
3 cloves garlic, minced
1/2 cup beef broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
Salt and pepper to taste
1 package (9 oz) cheese tortellini, cooked according to package instructions
Fresh parsley, chopped (for garnish)
Directions:
I. Heat the olive oil in a large skillet over medium-high heat. Add the beef pieces and season with salt, pepper, and thyme. Cook until browned on all sides, about 4-5 minutes. Remove the beef from the skillet and set aside.
II. In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
III. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let it reduce slightly, about 3-4 minutes.
IV. Lower the heat to medium and stir in the heavy cream. Cook until the sauce thickens slightly, about 5 minutes.
V. Return the cooked beef to the skillet, and add the cooked tortellini. Toss everything together to coat the tortellini and beef in the creamy sauce. Stir in the grated Parmesan cheese until melted and well combined.
VI. Garnish with chopped fresh parsley and serve hot. Enjoy with a side of crusty bread or a fresh salad for a complete meal.
