
Ingredients:
2 cups cooked chicken, shredded
1/2 cup BBQ sauce (your favorite brand)
8 slices of bread (sourdough or your choice)
2 cups shredded mozzarella or cheddar cheese
4 tablespoons unsalted butter, softened
1/2 teaspoon garlic powder (optional)
Fresh parsley, chopped (optional, for garnish)
Directions:
I. In a medium bowl, mix the shredded chicken with the BBQ sauce until fully coated.
II. Butter one side of each slice of bread. If you like a bit more flavor, mix the softened butter with garlic powder before spreading.
III. Heat a large skillet or griddle over medium heat. Place a slice of bread, buttered side down, on the skillet. Top with about 1/4 cup of shredded cheese, then add a generous amount of the BBQ chicken mixture. Sprinkle a bit more cheese on top, and place another slice of bread on top, buttered side up.
IV. Cook the sandwich for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
V. Remove the sandwich from the skillet and let it cool slightly before cutting it in half. Garnish with chopped parsley if desired, and serve hot.
