Cranberry Oatmeal Cookies

Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 1/2 cups dried cranberries
1/2 cup chopped walnuts or pecans (optional)

Directions:
I. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
II. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
III. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
IV. Stir in the rolled oats, dried cranberries, and chopped nuts (if using) until evenly distributed throughout the dough.
V. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
VI. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set. The cookies may appear slightly underbaked in the center but will firm up as they cool.
VII. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
