
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas, mashed
3/4 cup granulated sugar
1 egg, lightly beaten
1/3 cup unsalted butter, melted
1 teaspoon vanilla extract
Optional: 1/2 cup chopped nuts or chocolate chips
Directions:
I. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups with non-stick spray.
II. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
III. In a large bowl, mix the mashed bananas, sugar, egg, melted butter, and vanilla extract until well combined.
IV. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix. Fold in nuts or chocolate chips if desired.
V. Divide the batter evenly among the muffin cups, filling each about 3/4 full. You can also top each muffin with a banana slice for extra flavor and presentation.
VI. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
VII. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
