Chicken Fried Steak

Ingredients:
4 cube steaks (about 1/2 inch thick)
2 cups all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional)
2 large eggs
1 cup buttermilk
Vegetable oil, for frying
For the Gravy:
1/4 cup all-purpose flour
2 cups whole milk
Salt and pepper to taste

Directions:
I. In a shallow dish, whisk together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
II. In another shallow dish, beat the eggs and mix with the buttermilk.
III. Dredge each cube steak in the flour mixture, then dip it in the egg mixture, and finally dredge it in the flour mixture again, pressing to coat well. Set aside on a plate.
IV. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the steaks and fry for 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
V. For the gravy, drain all but 2-3 tablespoons of the oil from the skillet. Whisk in the flour and cook for 1-2 minutes, until lightly browned. Gradually whisk in the milk, stirring constantly, until the gravy is smooth and thickened. Season with salt and pepper to taste.
VI. Serve the chicken fried steak hot, smothered in gravy, with your favorite sides.
